Gluten-Free Coconut Macaroons

Try these gluten-free coconut macaroons. They are very soft and moist and easy to prepare.

100g grated coconut
2 egg whites
a pinch of salt
80g icing sugar
some lemon zest

Preparation time:

Prep: 5min
Cook: 20min
Total time: 25min


Preheat the oven at 160°C/320°F and prepare a baking sheet with baking parchment.

In a medium bowl, beat the egg whites until stiff with a pinch of salt, the lemon zest and the icing sugar.

Fold in carefully the grated coconut with a silicone spatula.

With two teaspoons or your wet hands, shape the coconut mixture into small balls and space them on the baking sheet.

Bake for about 20 minutes, until golden.

Let them cool down on the baking sheet!
