Soft German Apple Cake



I got this recipe from an elder lady when I was in Germany. This apple cake is very soft and tasty and perfect if you search for a fast and uncomplicated recipe!

Ingredients for a 26cm round cake pan:
 
125g margarine
125g sugar
200g flour
2 teaspoons of backing powder
3 medium eggs
1 lemon
4 apples
flaked almonds
a pinch of salt
some cinnamon



Preparation time:

Prep: 15 min
Cook: 35 min
Total time: 50 min



Directions:

Grease and line with parchment paper, a 26 cm round cake pan.  Preheat the oven at 170°C/340°F. 

In a medium bowl, stir the margarine with the sugar, until creamy.  Add the eggs and some drops of lemon juice and continue whisking. 

Sift the flour with the baking powder and the salt into the bowl and mix, until well blended. Pour the cake mixture into the cake pan. 

Now peel the apples and cut them into 4 pieces. Make slices across the apples with a knife and cut nearly all the way down, without cutting through the apple pieces.  

Place the apples on the cake mixture and add some cinnamon on them. 

Bake the cake for about 35 minutes until a toothpick inserted into the centre comes out clean. 

Decorate with some flaked almond if you want and serve warm!
