No Bake Oreo Cherry Cake

The summer has arrived in Italy! That's why we will prepare a cake without the oven. Today I share with you a No Bake Oreo Cherry Cake, which is very fresh and tasty.
For this recipe you need a 24cm springform pan (a pan where you can remove the sides from the base).

For the crust:
225g Oreo cookies
100g fused butter

For the cream:
500g curd cheese
250ml cream
40g icing sugar
50gwhite chocolate
4 teaspoons of whipped cream stabilizer

For the decoration:
10 cherries
Oreo cookies

Preparation time

Prep: 20min
Rest: 4h
Total time: 4h 20min


Start with the crust: Blend 225g of Oreo cookies and put them in a bowl. Fuse the butter and stir it with the cookies. With a glass, press crumbs into the bottom of the springform pie. 
Put the crust for 15 minutes in the freezer.

Meanwhile whip the cream, until stiff. In a second bowl, mix the curd cheese with the icing sugar and the whipped cream stabilizer.

Chop 50g of white chocolate. Fold in carefully the white chocolate and the whipped cream to the curd cheese.
Pour the cream all over the Oreo crust and smoothen.

Cover the cake and put it in the fridge for about 4 hours.

Decorate with Oreo cookies and cherries.

Serve fresh!
