Barley Salad with grilled Vegetables
This vegan barley salad with grilled vegetables is perfect for summer or lunch break at work!
Ingredients for 4 persons:
250g pear barley
1 aubergine
1 courgette
2 tomatoes
2 carrots
a handful of green olives
olive oil
cider vinegar
salt & pepper
fresh mint
Preparation time:
Prep: 15 min
Cook: 30
Total time: 45 min
Directions:
Wash the vegetables and cut them into slices (except the tomatoes and the green olives). Grill them with salt, oregano & a bit of olive oil. Grate a clove of garlic and spread it over the grilled vegetables. Add a bit of cider vinegar.
Cook the pearl barley in salted water following the instructions of the packaging. Drain and wash the barley and put it in a large bowl.
Cut the grilled vegetables into pieces and add them to the barley with the olives, the chopped mint and the tomatoes. Adjust with salt and oil if necessary and let it rest for 30 minutes.
