Fresh Strawberry Pie

When the strawberry season arrives, I use to prepare this Fresh Strawberry Pie with homemade custard.

With the ingredients I usually prepare a little pie (18cm pie pan) and some strawberry tartlets.
However, if you just want to prepare one Strawberry Pie, I advise you to use a 26 cm round pie pan.
For the crust
225g flour 
125g butter
50g icing sugar
1 yolk 
1 pinch of salt

For the custard

200ml milk
40g sugar
1 tablespoon of cornstarch
1 packet of vanilla sugar
some orange and lemon zest 
1 yolk

In addition:  
500g fresh strawberries

Preparation time:

Prep: 45 min  
Cook: 15 min 
Total time: 1h


In a large bowl stir the flour with the icing sugar and a pinch of salt. Cut the butter into pieces and add it with a yolk to the flour. Knead with your hands just until the dough comes together. Cover it in plastic wrap in put it in the fridge for at least 30 minutes.

Put the milk with a packet of vanilla sugar and the zests into a pan and bring it gently just below boiling point.

Meanwhile whisk the yolk with the sugar until creamy and add a tablespoon of cornstarch.
Pour a ladle of hot milk into the sugar mixture, whisking constantly.
Bring the mixture back into the pan and heat gently, stirring with a wooden spoon, until the custard is thickened.

Preheat the oven at 180°C/355°F.

Roll out the dough on a floured working surface and put it into the pie pan. 

Gently fit into bottom and up sites of the plate and remove the overhang dough and poke the crust with a fork.

Bake for about 15 minutes. Let the crust cool completely.

Meantime wash the strawberries and cut them into slices.

Now spread the custard over the surface from the crust and decorate with the strawberry slices.
