Original french Crêpes



This Crêpes recipe is from my French grandmother from Paris. 
It is one of my favourite sweet, cause it reminds me my childhood, when my mother prepared us these delicious Crêpes. 

You can also prepare salted Crêpes with this recipe, without using the sugar.

 Ingredients:

250g flour
50g sugar
500ml milk
250ml cream
4 medium eggs
1 packet of vanilla sugar
a pinch of salt
some lemon zest




Preparation time:
 
Prep: 15min
Cook: 25min
Total time: 40 min



Directions:

Whisk in a large mixing bowl the eggs with the sugar, a packet of vanilla sugar, the lemon zest and a pinch of salt. 

Put the milk and the cream together. Gradually add the milk mixture and the flour by turn to the eggs, stirring to combine, until smooth.

Heat an oiled frying pan over medium high heat. Pour half ladle of the batter into the pan and tilt it with a circular motion in order to coat evenly the surface with the batter.


Cook the crêpe for about 2 minutes, until the bottom is light brown. Loosen with a spatula, turn and cook the other side.

Do not add vegetal oil in the pan for the next Crêpes!


Put the crêpes on a plate and serve them with nutella, sugar, marmalade etc.
