Bahia Cake

This soft Bahia Cake has got an intensive taste of coconut, which generates summer feelings!
Ingredients for a 26cm round cake pan:
100g margarine
125g sugar
150g flour
150g grated coconut
200g natural yoghurt
2 teaspoon of backing powder
2 medium eggs
1 orange (zest & juice)
vanilla extract
a pinch of salt  

Preparation time: 

Prep: 15 min
Cook: 25 min
Total time 40 min 


Grease and line with parchment paper, a 26 cm round cake pan.  Preheat the oven at 190°C/375°F.  

In a medium bowl, stir the margarine with the sugar, until creamy.  Add the eggs, and some drops of vanilla extract and continue whisking.  Pour the natural yoghourt into the bowl together with the orange juice the orange zest. 

Sift the flour with the baking powder and the salt into the bowl and mix, until well blended. Fold in the grated coconut and pour the cake mixture into the cake pan.  

Bake the cake for about 35 minutes until a toothpick inserted into the centre comes out clean.  

Decorate with grated coconut if you want!
