Fluffy Carrot Muffins


These Carrot Muffins are very fluffy and moist. I share with you a tasty German recipe, which has to my eyes the perfect quantity of carrots.

Ingredients for 12 muffins:


For the muffins
100g grated carrots
125 g margarine
100 g flour
100g ground almonds
1 packet of vanilla sugar  
1/2 packet of backing powder  
100g sugar
2 medium eggs
orange zest

a pinch of salt 


For the frosting
50 g  cream cheese
50 g icing sugar
1 teaspoon of margarine
 

Preparation time:
 
Prep: 15 min
Cook: 30 min
Total time: 45 min





Directions: 

Preheat oven to 175°C / 350°F and line your muffin cups with paper muffin. In a medium bowl, beat the egg whites until stiff with a pinch of salt and a packet of vanilla sugar.
 
Take a second bowl and stir the margarine with the sugar. Add the egg yolks and the orange zest and whisk for about 5 minutes, until creamy.

Gradually sift the flour with the packing powder into the bowl. Incorporate the ground almonds and mix until well blended.
 

Now use a silicone spatula and fold in carefully the white eggs. Repeat the same procedure with the grated carrots.
 
Pour the muffin mixture into the paper muffins.
 
Bake the muffins for about 30-35 minutes until a toothpick inserted into the center comes out clean and let them cool down.

Meanwhile prepare the frosting: whisk all the ingredients until creamy an spread over the muffins.

Decorate with some minced almonds.
