Zebra Cake



Today I will show you how to prepare a lactose free Zebra Cake! Although we won't use butter and milk, I guarantee you that this cake is very soft and tasty! Moreover it has a very extraordinary aspect.

Ingredients for a 26cm round cake pan:
 

250ml vegetal oil
120ml sparkling water
150g sugar
300g flour
75g ground almonds
1 packet of baking powder
1 packet of vanilla sugar
5 medium eggs
almond extract
a pinch of salt
30g cocoa powder






Preparation time:

Prep: 15 min

Cook: 30 min
Total time: 45 min





Directions: 


Grease and line with parchment paper, a 26 cm round cake pan.  Preheat the oven at 175°C/350°F.


 
In a medium bowl, beat the egg whites until stiff with a packet of vanilla sugar.

 
Take a second bowl and whisk the egg yolks with the sugar and the almond extract for about 5 minutes, until creamy.

 
Pour the sparkling water and the vegetal oil and continue stirring. 

 
Gradually sift the flour with the packing powder into the bowl. Incorporate the ground almonds and mix until well blended.

 
Now use a silicone spatula and fold in carefully the white eggs.

 
Divide the cake mixture in two bowls and add the cocoa powder in one of them. .

 
Begin to take one tablespoon of white batter and place it in the middle of the cake pan. 

Then over it, place a tablespoon of the chocolate batter and repeat this process, until all batter has been used.

 
Bake the cake for about 35 minutes until a toothpick inserted into the center comes out clean.
