Surprising Piñata Cupcakes
The Piñata is a popular game in South America. A container made of papier-mâché and filled with lots of clourful candies, suspends from a tree. The aim is to beat the Piñata blindfold with a stick, until it bursts, so that all the candies can fall out.
The idea of the Piñata Cupcakes is quite the same. When you do the first bite all the candies come out surprisingly!
Ingredients for 12 Cupcakes:
For the dough
100g butter
140g sugar
2 medium eggs
180g flour
125ml milk
1 ½ teaspoon of baking powder
a pinch of salt
vanilla extract
For the Frosting
50 g cream cheese
50 g icing sugar
1 teaspoon of butter
For the decoration:
Funfetti
mini M&M's or mini Smarties
Preparation time:
Prep: 15 min
Cook: 20 min
Total time: 35 min
Directions:
Grease the cupcake pan and preheat the oven at 160°C/320°F.
In a medium bowl, stir the margarine with the sugar, until creamy. Add the eggs, and some drops of vanilla extract and continue whisking.
Sift the flour with the baking powder and the salt into the bowl and mix. Add the milk and stir, until well blended. Pour the mixture into the cupcake pan.
Bake for about 20 minutes until a toothpick inserted into the centre comes out clean. Let the cupcakes cool out completely.
Meanwhile prepare the frosting: mix all the ingredients together.
Cut out a the core of the Cupcakes and fill up with the M&M's or the Smarties. Cut off the very top of the core and place it back on your cupcake to cover the M&M's.
Spread some frosting on the cupcakes and sprinkle them with Funfetti.
Let the Piñata Cupcakes rest in the fridge for an hour and serve cool.
