Marmalade filled Butter Biscuits

These Marmalade filled Biscuits are very tasty and perfect for every occasion. You can fill the biscuits also with Nutella if you prefer!

For the dough
300g flour
125g butter
100g icing sugar
1 medium egg
 ½ packet of backing powder
1 pinch of salt
some lemon zest

For the filling
Marmalade (strawberry for example)

Preparation time:

Prep: 20 min
Cook: 10 min
Total time: 30min


In a large bowl stir the flour with the icing sugar and a pinch of salt. Cut the butter into pieces and add it with a yolk to the flour. 

Knead with your hands just until the dough comes together. 

Cover it in plastic wrap in put it in the fridge for at least 30 minutes.

Preheat the oven at 180°C/355°F and prepare two baking sheets with baking parchment.

Roll out the dough on a floured working surface and cute the dough into cookies with a cookie cutter.  Use a smaller cookie cutter with the same form and cut a hole in the center of half the cookies.

Place the cookies on the prepared baking sheets and bake for about 10 minutes, until the edges begin to brown.

Spread the marmalade and the whole cookies and place the cookies with the cutout on top.

Sprinkle with icing sugar if you want.
